  • 1.5 kg beef or lamb (shank or brisket)

  • 1 tablespoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • 2 tablespoons flour
  • 1 tablespoon ghee
  • Fresh cilantro, chopped (for garnish)

  • Instructions:
  1. Heat oil in a large saucepan or Dutch oven over medium heat. Add the sliced onions and fry until they are golden brown.
  2. Add the minced ginger and garlic and fry for 2 minutes.
  3. Add the chopped tomatoes and cook until they are soft.
  4. Add the yogurt, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, and salt to the saucepan. Stir to combine.
  5. Add the beef or lamb to the saucepan and mix well with the spices.
  6. Add 4 cups of water to the saucepan and stir to combine.
  7. Bring the mixture to a boil and then reduce the heat to low. Cover the saucepan and simmer for 3-4 hours, or until the meat is tender and falls off the bone. Stir occasionally.
  8. In a separate pan, heat the ghee and add the flour. Cook for 2 minutes, stirring constantly, to make a roux.
  9. Add the roux to the Nihari mixture and stir to combine. Cook for another 10 minutes, or until the sauce has thickened.
  10. Serve the Nihari hot, garnished with chopped cilantro, with roti or rice.
